Our "Cocido Madrileño" is elaborated slowly. We first prepare the broth with the meats, the iberian ham bone and the iberian bacon to later add the chickpeas and the chorizo. We finally add the vegetables and when the stew is made, we separate the broth with which you can make a noodle soup or take alone the "Consomé" directly. In Madrid, is traditionally consumed separately.
