Infuse the milk with cinnamon, vanilla and lemon rind. Beat the egg yolks with the sugar in a bowl and gradually add the milk until the texture is homogeneous. Cook in a bain-marie. Finally, add ground cinnamon when they are cold.

Keep frozen at -18ºC. Keep refrigerated and consume in 2 days.
